Great, you made a smart choice buying a Fuji. 28 pounds isn’t that bad. If you like the bike and want to reduce the weight, you can start with the wheels, swapping them would be a positive change in many ways.
Great to hear that you found your way back to cycling, Paul! You are right, both HT & FS have their pros and cons. The Trail 7 is certainly a good MTB, no doubt.
I believe a hybrid bike is the best choice for you if you like to coast on all terrains. If you favor off-road more, then adventure/gravel hybrids would be the best. You have to cut corners on technical trails obviously, but they are fun to ride. We are making a hybrid bike section right now, but in the meantime, you can check the best hybrid bikes on Bicycle Guider

Sad to hear that. Do you have a MicroShift front derailleur? It might happen because Cannondale used such a weak part there, which is a shame. If you tried to adjust it without any positive results, you might want to upgrade it to Shimano’s Deore, for example. Doesn’t cost much but will add value to this bike.
